How To: Make an Apple Galette (With Video)

Warming yourself from the inside out with this spiced, autumnal pastry.

It’s apple season in Shanghai, making it the perfect time to take out that rolling pin and whip up a delicious galette! Similar to an apple pie, the dough is much easier to assemble. An apple galette needs no formal training and takes no time at all! I promise, it’s so easy you can even have your kids do it for you!


Here are a few tips for the perfect apple galette.

When you mix the apples in cinnamon and sugar there will be some liquid from the apples that sits in the bottom of the bowl. You don’t want to use that liquid in your galette, as it will make your crust very soggy – and no one wants a soggy crust.

Another tip is to pile up just enough of the sliced apples so that you create a dome of apples. Make sure it’s not so high that the border of the dough cannot cover part of the apples. I find four to five to be the perfect number to create ample filling.

Lastly, don’t forget the toppings! Whipping cream, pecans, caramel and vanilla ice cream are all perfect accompaniments for an apple galette – so, grab your plates, grab some forks and dig in!

Apple Galette


  • 4 apples
  • 1 tsp (4g) cinnamon
  • ¼ tsp (1g) cloves
  • ¼ tsp (1g) nutmeg
  • 1 egg
  • ½ tbsp (7ml) lemon juice
  • 1 1/2 tbsp (21g) flour
  • ¼ (60g) cup brown sugar
  • 1 pre-made, unbaked pie dough
  • Whipping cream, vanilla ice cream, caramel (optional)


1. Preheat oven to 400°F (200°C).

2. Cut apples in half, then slice into long pieces.

3. Toss with brown sugar, flour, lemon juice, cinnamon, nutmeg and cloves. Refrigerate for 30 minutes, or as you prep the rest of the ingredients.

4. Place a pre-made, round dough on a parchment paper, then onto a baking sheet. Set aside.

5. Arrange apples in the middle of the dough. Leave a 1½ - 2 inch border.

6. Fold the border of the dough over the apples, sealing the edges while leaving the middle exposed.

7. Whisk the milk with one egg and brush onto the entire crust.

8. Bake at 425°F (190°C) for 35-40 minutes.

To make the most of your galette, serve warm with whipping cream, a caramel drizzle or delicious vanilla ice cream!

Apple Galette Ingredients



  • 4只苹果
  • 1茶匙(4克)肉桂粉
  • 1/4茶匙(1克)大蒜
  • 1/4茶匙(1克)肉豆蔻
  • 1只鸡蛋
  • 1/2茶匙(7毫升)柠檬汁
  • 1又1/2茶匙(21克)面粉
  • 1/4杯(60克)红糖
  • 1份事先备好,未经烘烤的饼皮
  • 打发的鲜奶油,香草冰淇淋,焦糖(选用)


1. 把烤箱预热到400华氏(200摄氏度)。

2. 苹果一切为二,然后切成长条。

3. 放进红糖,面粉,柠檬汁,肉桂粉,肉豆蔻和大蒜,入冰箱冷藏30分钟或你在准备其余原料的时候,放进冰箱冷藏。

4. 把一个事先备好的圆形面团放在牛皮纸上,然后放入烤盘,备用。

5. 把苹果放在面团中央,留出1又1/2到2寸的空间。

6. 用面团四边向内折叠盖住苹果,封住边角,中间部分不要盖住。

7. 鸡蛋加入牛奶中,并搅打然后将牛奶蛋液刷到饼上。

8. 如烤箱,在425华氏(190摄氏度)温度下,烤35到40分钟。
