How To: Make Dorito-Crusted Chicken Nuggets

When your kids are looking for a tasty after-school snack, forget about frozen packages of chicken nuggets that are full of chemicals and processed meat. This recipe for Dorito-Crusted Chicken Nuggets, using FIELDS’ hormone- and antibiotic-free chicken, is so delicious your kids will gobble up the entire plate. Don’t forget a generous dollop of homemade Ranch Dipping Sauce that tastes great with chicken nuggets and goes even better with carrots.


Chicken Nuggets

2 cups (500ml) buttermilk

2 lbs (1 kg) chicken breasts, cut into bite-sized pieces

Salt and pepper

2 eggs, beaten

1 cup (125g) flour

1 large bag Doritos (Nacho Cheese flavored)

Ranch Dipping Sauce

1 cup (250g) sour cream

2 tbsp (28g) Ranch Dressing Mix

(see Vegetable Ranch Tortilla Pizzas)


1. Soak the chicken in the buttermilk for 30 minutes to 2 hours.

2. Preheat oven to 200oC (400oF). Line a baking sheet with parchment paper. Then, coat with cooking spray.

3. Crush the chips into very small pieces in a food processor. Be careful not to over-process them, or they’ll turn into a powder with no crunch. Spread out on a large plate.

4. Place the beaten eggs in a medium-sized bowl. Spread the our on a second large plate.

5. Shake excess buttermilk off each chicken piece. Dip in the our, shake off the excess, then dip in the egg mixture.

6. Coat the chicken with the Dorito crumbs, pushing down to completely cover the chicken.

7. Place the nuggets on the parchment-lined baking sheet in a single layer.

8. Bake for 15 minutes.

9. Serve hot with a side of Ranch Dressing Sauce.
