How to Make: Fried Pizza
Learn with Ocean Grounds

OG serves one-of-a-kind creative coffees and coffee cocktails as well as tacos, healthy salads, fried pizzas and other delicious food from up and down the California coast. With them, we learnt how to make such a delicious fried pizza! Here's how:
Ingredients
The dough:
- 550g whole wheat organic flour
- 9g dry active yeast
- A big pinch of Korean snow-flake salt
- 13⁄4 cups water (included for water to activate yeast)
- A small pinch of sugar to activate the yeast
- 1/2 teaspoon olive oil
Pizza toppings:
When it comes to pizza toppings, what and how much you use is entirely up to you, so get creative! The following combo is delicious:
- 400g canned tomato sauce
- Prosciutto
- Asparagus
- Arugula
- Basil
- Diced red onion
- Mozzarella
- Oregano
- Parmesan cheese
- A drizzle of olive oil
- A drizzle of balsamic reduction
The Dough: Procedure
- Measure out all ingredients separately.
- Add a cup of room temperature water to your measured yeast and add the pinch of sugar. Rest in a warm place to activate, about 20-30 minutes.
- Once yeast is activated, add the flour and salt.
- Mix all ingredients together with a fork until dough comes together. Turn out on a lightly floured surface and work into a ball.
- Once this is done, rub the dough lightly with a very small amount of olive oil and place in an airtight container or a small bowl and cover with plastic wrap.
- Ferment for about 12 hrs.
- Once the dough has risen, portion dough into individual balls, and roll them into smooth dough balls again. Coat with olive oil, return to container and let rise for 1-2 hours.
- Once the dough balls have doubled in size, our a working surface and form your pizza dough. You can do this using your hands or a rolling pin.
- Fill a non-stick pan with enough vegetable oil so that the oil would cover the first knuckle of your pointer finger. Heat until the oil begins to smoke.
- Place the dough into the hot oil, laying it down away from you so as not to splash. Fry until golden brown on both sides.
- Place the pizza dough on paper towels to sop up the extra oil.
Putting It All Together
- In a small saucepan,cook the tomato sauce on low heat until reduced by 1/3. You don’t want wet sauce or else your pizza will get soggy. Once reduced, toss in some dried oregano or Italian spice mix, a drizzle of olive oil and salt to taste. Set aside.
- Grab one of the fried pizza dough bases and apply a layer of your reduced tomato sauce.
- Then add your prosciutto, asparagus, arugula, basil, diced red onions, mozzarella and anything else that you like on your pizzas.
- At this point you can eat the pizza as is, because the residual heat from the frying and the sauce will melt the cheese, or, you can pop the pizza into a preheated oven for another 3-5 minutes.
- Just before serving, drizzle with a bit of olive oil, balsamic reduction and some fresh Parmesan. Slice and serve!
