Baby Lobster Paella

The Signature Baby Lobster Paella features warm and classic Mediterranean flavor with a base of elastic rice and a fusion of Spanish seafood components.

 

Ingredients

30g shrimp

30g scallop

30g squid

30g seabass

1 baby lobster

6 black mussels

1 liter stock

130g Spanish rice

1 tomato, finely chopped and dressed in balsamic vinegar

splash white wine

100ml olive oil

 

Instructions

1. Drizzle the olive oil over a paella pan set at medium-high temperature, then introduce finely chopped onions and garlic, stir-frying to achieve both fragrant aromas and translucent onions.

2. The seafood symphony comprising of shrimp, scallops, squid, and seabass, is then added along with a dash of salt, pepper, and white wine to complement the oceanic flavors; let this medley dance within the pan for approximately 5 minutes.

3. Inclusion of the Spanish rice and chopped tomato infused with balsamic vinegar, followed by additional stirring, is imperative before adding the stock and then allow it to simmer for an optimal duration of 5 minutes.

4. As a final touch, adorn the dish with perfectly cooked baby lobster and mussels, then place the paella pan in a preheated oven maintained at 210 degrees Celsius for 12 minutes. Before serving, generously squeeze the lemon juice on top and sprinkle with freshly-chopped parsley to complete this culinary masterpiece.
